When it comes to baking, count me out. Every cookie and bread has been a science experiment for me. However, it doesn’t mean desserts aren’t on the menu.
Peanut butter lovers will prize this ridiculously simple no-bake pie. Other than peanut butter, it has a classic component for warmer weather; ice cream! Can be frozen ahead of time if you’re in a rush, or if you want to save for later.
Prep time: 15 min + freezing
Ingredients:
- 1 qt. vanilla ice cream, softened
- 1 graham cracker crust
- 1/2 cup peanut butter
- 1/3 cup light corn syrup
- Chocolate syrup
- Chopped walnuts
Spread half of the ice cream onto the crust.
Combine peanut butter and corn syrup and spread over the ice cream. (This part is a pain in the ass but its the tastiest,promise!)
Top with remaining ice cream.
Drizzle with chocolate syrup and top with walnuts.
Freeze for 3+ hours.
Personally I am not much of a sweets person, but I go out of my way for this pie. It’s stupid simple and crazy yummy. Gotta make at least two every time. And graham cracker crust? Are you kidding? No brainer.
Because this entire pie is made of ice cream, I’ve always had problems keeping it out more than 5 minutes during the summer time, so it’s more ideal in the spring. Otherwise keep. It. Frozen!
