For myself, Mexican food easily surpasses any other cuisine. Flavors and seasonings, colors that come alive… it’s absolute passion on your plate. While visiting a restaurant, there is a lot more available to us. At home we’re likely to stick to the basics. I’d like to share three simple recipes to keep that ¡Olé! in your kitchen.
Just a reminder, I measure by pinches, spoonfuls, and handfuls and test by taste. I did my best to give you estimates on how much of each ingredient to use.
Pico de Gallo
- 2 large tomatoes
- 1/2 finely chopped onion
- 2 tbsp cilantro
- 1 chopped jalapeno
- 1 tsp lime juice
- 1 tsp lemon juice
- salt and pepper to taste
Mix together.
Not a cilantro fan? Don’t add. Too much jalapeno? Use what you need. Salt lightly and taste before adding more.
Serve with chips, use as a topping, or even a stuffing paired with meat.
Cajun Lime Sauce
- 1 cup sour cream
- 2 tsp lime juice
- 1-2 tsp cajun
- 1 tbsp finely chopped garlic
- salt to taste
Mix together.
I enjoy a lot of garlic so I may add more.
Sometimes I’ll do 3/4 cup of sour cream and 1/4 cup of real mayo.
This is a sauce I’ve used inside wraps, tacos, or even as a dipping sauce. Feel free to get creative. Really awesome with beef.
Guacamole
- 2-3 avocados
- 1 small diced tomato
- 1 tbsp cilantro
- 1 tsp garlic salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp red pepper flakes
- 1 tsp lime juice
- salt and pepper to taste
Mix together.
If it’s not salty enough, I skip the regular salt and just use garlic salt. Add, mix, and taste. You can always add but never take away!!!
Serve with chips or as a topping.
You might have to take a field trip to the store for some fresh tomatoes, cilantro, avocados, the like.. but with hardly any prep time and a whole lot of flavor, it’s definitely worth it.
